To knead the dough:

  • 375 ml milk;
  • 45 g granulated sugar;
  • 40 g butter;
  • dry instant yeast – 7-8 g;
  • 15 ml olive or corn oil;
  • 1 egg;
  • 1 tsp salt;
  • 500 grams of flour.

For filling:

  • boiled chicken eggs – 6 pcs.;
  • green onions - a large bunch;
  • salt, other desired spices to taste.

  1. Heat the milk without bringing it to a boil. Dissolve a spoonful of sugar, yeast, and add a little salt in a warm liquid. Stir the resulting mixture and set aside for a quarter of an hour until a yeast “cap” appears.
  2. Beat the remaining amount of sugar with the chicken egg, gradually add softened butter and a little salt.
  3. Mix the yeast mixture with the egg-butter mixture.
  4. Sift flour into a deep bowl. Do not rush to add the entire amount of flour, leave a little for mixing. Make a well in the middle of the flour, into which pour the mixture obtained from the previous steps.
  5. You need to knead the dough for a long time, adding flour little by little. At the end of kneading, add corn oil. Achieve a smooth dough consistency.
  6. Cover the bowl with the dough with a cotton towel and leave to rise for an hour and a half.
  7. To prepare the filling, you need to combine boiled eggs, chopped into small cubes, with chopped green onions, salt and mix. If desired, add a teaspoon of melted butter, which will add additional juiciness to the finished dish.
  8. Knead the dough once again and separate a small piece. Roll out this piece of dough on a floured surface into a flat cake. Place the prepared mixture in the middle of the flatbread: onion and egg. Seal the edges to form a pie. Do the same with all the dough and filling.
  9. It is recommended to fry the pies in vegetable oil (sunflower or olive) in a thick-walled frying pan until an appetizing crispy crust forms.

Baked in the oven

Pies with any filling, be it onions with herbs, cabbage or potato filling, can be baked in the oven. This recipe is considered quick because it will not waste extra time frying each product in a frying pan.

Ingredients for the dough:

  • 250 ml fat milk;
  • 25 g pressed fresh yeast;
  • 3 eggs;
  • 70 g butter;
  • sugar – 50 g;
  • salt;
  • flour – 600 g.
  • boiled eggs – 5 pcs.;
  • green onions - a large bunch;
  • salt.

Cooking sequence:

  1. Break the yeast into pieces and add warmed milk. Add sugar and half of the total amount of flour. Mix the products, cover with a towel, and leave to rise for two hours.
  2. Add whites, soft butter, and yolks beaten with a pinch of salt to the risen dough.
  3. Add the remaining flour and knead into a plastic dough.
  4. Divide it into portions weighing approximately 50 g. Roll each into a thin layer, in the middle of which put filling (combined eggs, diced, with finely chopped green onions). Form pies, pinching the edges of the product.
  5. Place the pies, seam side down, on a baking sheet (the bottom of which is lightly oiled with vegetable oil). Grease the surface of the workpieces with beaten yolk. Cover the products with a towel and leave to rise (about 30 minutes).
  6. Place the pies in the preheated oven. Set the temperature at 120 degrees. Cook for 25 minutes, then set the temperature to 180 degrees and continue baking until done for about a quarter of an hour.

Made from puff pastry with rice

An easy way to make delicious pies is to make them using ready-made puff pastry. You don’t have to waste time on kneading; the entire cooking process will take no more than 20 minutes, taking into account the formation of the products. To make the filling more satisfying and nutritious, add boiled rice to the onion.

Ingredients:

  • 400 gram package of puff pastry;
  • 4 things. boiled eggs;
  • a glass of boiled polished rice;
  • green onions - to taste;
  • melted butter - a tablespoon;
  • salt.

Cooking sequence:

  1. Roll out the defrosted dough a little and cut into squares.
  2. Combine crushed eggs with cooled rice and chopped onions. Salt the mixture.
  3. Place a spoonful of filling onto the dough squares. Seal the edges with an envelope.
  4. Place the pies on a baking sheet lined with baking paper. Brush the products with beaten yolk.
  5. Cook the baked goods for 20-25 minutes at 195 degrees in the oven.

How to make lazy pies with eggs and onions?

When you don’t have enough time to form individual pies, but want to prepare delicious pastries, a “lazy” recipe comes to the rescue. To pamper your household with a delicious dish, you need to spend no more than 10 minutes.

Ingredients:

  • 2 boiled and raw eggs;
  • 1 tsp. baking powder;
  • 1 bunch of green onions;
  • 2 glasses of kefir;
  • 100 ml sour cream;
  • flour - about a glass;
  • salt.

Cooking sequence:

  1. Beat raw eggs with kefir, sour cream and salt.
  2. Add baking powder and flour. Add enough flour so that the dough becomes similar to the consistency of pancakes.

  11. Let's cut the green onion, not too large. The proportions of onions and eggs can be different: you can take more or less of something.

How to cook fried pies with onions and eggs

First of all, you need to put the dough. To do this, combine warm (not hot) water with sugar and salt in a large saucepan, add yeast. Mix. Add sifted flour gradually and quickly replace the dough. Leave it to rise for 30-40 minutes in a warm place. Yeast dough prepared in plain water rises very well and baked goods always turn out excellent.

While the dough is rising, prepare the filling. Finely chop green onions into a deep bowl.

Add boiled eggs, grated on a coarse grater, or cut them into small cubes.

Using a coarse or fine grater, grate the frozen butter and combine with eggs and onions. Mix.

Season the filling with salt and pepper to taste. The filling is ready.

When the dough has risen, you need to knead it with your hands or with a large spoon and place it on a table dusted well with flour.

Form the dough into balls of the required size and roll out with a rolling pin.

I don’t know why, but the majority of my friends rarely make pies with onions and eggs in the oven; they mostly fry them in a frying pan. We will prepare the dough with kefir, since it is with kefir dough that the pies turn out soft and last longer, and the time to prepare this dough takes much less than with yeast dough.

Pies with green onions and eggs in a frying pan - kefir dough recipe

Below are the ingredients to make 20-25 pies. Pies made from kefir dough turn out tender, fluffy and, as already mentioned, quick. They retain their freshness even the next day.

INGREDIENTS:

  • Flour 5-6 glasses.
  • Kefir 0.5-0.6 liters.
  • Vegetable oil 2-3 tablespoons.
  • Sugar, soda, salt, all in a teaspoon.

Flour and liquids are given approximately the way I do everything on an intuitive level. As my grandmother says, “I cook by eye,” you need to feel the dough, whether it needs liquid or whether you need to add a little flour. So, my dear chefs, let’s cook, and, as they say, we’ll get our hands on it.

INGREDIENTS FOR FILLING:

  • 2 bunches of green onion feathers.
  • 6-7 boiled chicken eggs.
  • 3 spoons of sour cream.
  • Salt and pepper to taste.

COOKING PROCESS:

It is better to take eggs that are not fresh enough. Well, not fresh. It is advisable to take those that have been in the refrigerator for 2-3 days. No matter how strange it may sound, such eggs are better cleaned.

☑ Sift all the flour but start cooking with one glass. Pour a glass of flour into the bowl where you plan to knead the dough. Add sugar and salt.

☑ Pour kefir into the flour and mix so that no lumps form.

☑ Leave the dough for a few minutes to allow the kefir to begin the fermentation reaction. In a few minutes you will see for yourself that the reaction has begun.

☑ After the reaction begins, gradually mix in the flour.

☑ Add flour and bring the dough to such a state that it can be kneaded with your hands. But don't make it too cool.

☑ It usually takes me 5 cups of flour to bring the dough to this state. I add a little more flour while kneading with my hands.

☑ The amount of flour depends on its type. Some varieties have more gluten, some have less, and the amount of flour added depends on this.

☑ We start the whole process with a spoon. And when it is no longer possible to knead the dough with a spoon, we begin to knead with our hands.

☑ Lubricate your hands with vegetable oil during the process.

☑ When the dough reaches the desired consistency, roll it into a ball and leave it under a towel for half an hour so that the dough can sit properly.

☑ While the dough is gaining strength, you can prepare the filling for our future pies with onions and eggs.

☑ Then cool the eggs, peel and finely chop. You can use improvised means, such as an egg slicer, or you can simply use a knife.

☑ Wash the green onion feathers well and finely chop them.

☑ Place the ingredients in a saucepan, add some salt and stir to taste.

☑ The next ingredient in the recipe is sour cream. You can add an equal amount of mayonnaise to the sour cream, or prepare the filling using just one. Many people add mayonnaise because of its high calorie content in order to make the pies much more filling.

☑ And so after adding sour cream or mayonnaise, mix the filling well until smooth. You need to mix so that every piece is soaked in sour cream.

☑ The filling is ready, the dough has settled, you can start forming the pies.

☑ Before you begin the process of sculpting pies, prepare the place where you will work and prepare some flour in reserve, it may come in handy.

☑ Sift a small amount of flour onto the work surface so that the dough does not stick to the table.

☑ Visually divide the main dough into four parts and cut off one fourth of the dough, then divide this piece into five more parts.

☑ Roll each piece into a small flat cake. Make sure that the cake turns out uniform over the entire area.

☑ Place the filling (a tablespoon) in the middle and carefully glue the edges together. Of course, each of us, when buying pies in cafes or canteens, remembers that feeling when there is a lot of dough and not enough filling.

☑ At home, you can cram in as much filling as possible. But remember that if there is a lot of filling, you simply will not be able to close the pie. So add the filling in moderation. So that your pie can close without much effort and will not burst from tension.

☑ And so the filling is inside, now we put the pie on the palm of our hands and press it down a little on top so that the filling is distributed throughout the entire pie.

☑ We make several preparations and only after that put the frying pan on the fire and pour in vegetable oil. The butter should cover the pie by half.

☑ As soon as the oil is hot, place the pies in hot oil and fry the pies with onions and eggs until golden brown.

☑ The most important thing is to catch the golden mean temperature for baking pies in a frying pan. The temperature should be such that the dough bakes evenly both inside and outside.

☑ Therefore, when the first pie is ready, I make sure to open it and check how ready the dough is inside. It happens that the outside of the pies is already burning, but the inside of the dough is raw. This means that the heating needs to be reduced a little.

☑ And while the first batch of pies is fried in a frying pan, I prepare the second batch and so on until the filling or dough runs out.

☑ I take the pies out of the frying pan using two forks. And put it in a saucepan.

☑ Serve the onion and egg pies hot, with sour cream and homemade compote.

☑ Put it in a bowl and cover it with a towel or cling film. The dough should rise, it will take from 1 to 2 hours. Usually at least 2 hours. During this time, the dough should rise twice.

While the dough is gaining strength, you can start preparing the filling for our pies.

  • 5-6 eggs.
  • 1 bunch of onion feathers.
  • 30-40 grams of butter.

COOKING PROCESS:

Before you start working with the dough, at least 2 hours must pass and the dough must rise twice. Only after this you can start working with the test.

☑ We make these small balls from the dough and place them on a table greased with vegetable oil.

☑ I knead each ball into a flat cake like this.

☑ I take one egg yolk, shake it with a fork and brush the resulting mixture onto the pies.

☑ Now you can put the pies in the oven. I preheat the oven to 180 degrees and only when the temperature reaches the desired level can the pies be placed in it. During this time, the pies will rise a little.

I bake for approximately 30 minutes.
